I like that.. the brain. I've always wondered what it was called - but can't find it. I did find this: Since their bones have not calcified completely, pigment from the bone marrow can seep through the porous bones. Freezing can also contribute to this seepage. When the chicken is cooked, the pigment turns dark. It is perfectly safe to eat chicken meat that turns dark during cooking.

The brain omg I laffed!! My favorite part of a whole roast chicken (besides the skin, duh) are the medallions of dark meat from the back and the tail. Those juicy little tidbits are the chef’s reward.

I’m with shir. I think it’s the kidney. That’s what I always called it, tucked in the little hollow bone? If you remove this nugget from the thigh (only found in the thigh) when raw, it is pure blood. Ohhhh I’m cringing. NOT my fav part at all and when I’m cleaning raw chicken with vinegar or lemon juice, which I always do, I remove it. Some restaurants leave it and I always take it out. 🥴
